Covered with a thin layer of ash, the slighthly wrinkled raw goat cheese, from Loire Valley, is recognizable by its ring shape. Inside the cheese, the paste is white, firm and homogeneous. Young, it develops some goatty and vegetal notes and a fresh acidity and has a fluffly texture. Aged, it will get an interesting intensity and be more creamy in the border and firmer/ crumbly in the center.
This bloomy rind cheese is made from raw cow's milk and is AOP certified.
