The world’s first color changing gin. Ink Gin was created to capture the essence of the Clitoria Ternatea (butterfly pea flower) in a spirit. Ink Gin is pot distilled in small batches with 12 organic botanicals selected to be in perfect harmony with the flower, before being infused with the petals to impart a subtle astringency & a beautiful natural hue.
The curious floral ‘ink’, traditionally used in cuisine as a herbal infusion and in Ayurveda, is pH sensitive, changing color to a soft blush pink when mixed with tonic water, lemon or lime juice.
The other 12 botanicals are a mix of Australian native, exotic and traditional. The traditional flavor of juniper berries got a distinctly Australian twist with locally grown Lemon Myrtle leaves, Tasmanian Pepper berries, and fresh Valencia oranges all contributing to the dominant character. Playing supporting roles, cinnamon, coriander, cardamom, licorice, angelica and orris root, elderflower and lemon peel provide balance, aroma, fragrance, and spice.
