Although the production of Fourme d’Ambert was first recorded during the Middle Ages, legend has it that in the time of the Gauls, druids celebrated their cult by eating this cheese. After, it was also use as a bargaining ship to use ‘’jasseries’’, house in the mountains in which cheese can be made. Fourme d’Ambert has a creamy and supple texture which contrasts with its rather strong and savoury flavour typical of a farm cheese.
